Estragon is used in French cuisine, it has an aromatic smell and slightly bitter taste. It is used to flavour marinades, herbal vinegars, tinned foods, mustard, and to sour cabbage or preserve cucumbers. It is an excellent addition to numerous poultry, fried fish, cold roast pork and giblets dishes as well as scrambled eggs. Estragon is used to season cooked courgettes and leeks, stewed carrots, salads, tartar sauce, mayonnaise.
